E37 A plan. To check water level I have to remove a floor panel to see the gauge on the tank and for the fuel level have to remove stairs and then floor panel to see gauge.
Anyone have an idea  how to install a remote gauge setup for water and fuel?

I just had to change my fuel tank E35. Florida Marine Tanks the original manufacturer of Endeavour tanks made an identical tank to fit in. It came with an electric sender that matches up with many guages. I asked if they sold just the sender that I may use on my other tanks and they told me yes, $75.00 plus $25.00 shippping they replied.
The other idea is to look into firboy by Xintex. I just put in a single sender/guage for my holding tank they also make a two tank version.

Don't know about your boat but the tank in mine is super deep.  (fuel). These a manual one on the top side of the tank but I'd like an electric one.  Tell us what u find out

There are many options for tank sending.
I like the blue sea vehical management system. It can monitor up to 3 tanks, or 2 tanks and a  bilge pump. It also monitors and alarms for a/c voltage, d/c voltage, in a very user friendly interfact.

Its a little pricey but when you compare it to everything it replaces, imo a bargain.

The water tank on my E37 had been replaced with 2 50 gallon tanks.  I added a WEMA UP7-B 7 tank guage.  That gave me a water tank, 2 fuel tanks,  holding tanks and bilge in a compact guage.  I've had it in for about 2 years and 200o miles with no problems.
